Glazed Carrots       from the kitchen of: Roni Ponto

 


 

Ingredients

1 pound carrots, sliced
3-4 Tablespoons of olive oil
4 Tablespoons unsalted butter
1 cup ginger ale
1/4 cup brown sugar

Directions

Heat oven to 400 degrees. Prepare a cookie sheet - cover with foil or spray with Pam

In a small sauce pan over medium-low heat, combine the butter, brown sugar and ginger ale and bring to a simmer to reduce to a glaze.

Toss carrots and oil then pour on to a cookie sheet. Bake in the oven 30-40 minutes until the carrots are just tender. Stir carrots after 20 minutes to help with browning.

Toss glaze and carrots to coat, and then pour into a serving dish.

Serve immediately.
