"Pauline's Sweet Potatoes"       from the kitchen of: Bonnie Furman

 


 
2-3 cups mashed sweet potatoes or canned yams (I usually buy that giant sized can of yams)
1 can (8 1/2 ounce) crushed pineapple in juice, drained (but save a little of the juice from the can)

 
Mix together in a microwave safe dish. Then add & mix in:

 
1/2 cup (1 stick) melted butter
1/4 cup sugar
1 tsp cinnamon

 
Microwave on high for 4 minutes. Then on the top, add:

 
1/4 cup brown sugar (sprinkle over the top)
mini marshmallows (just enough to cover the surface)

 
Microwave on high 2 more minutes.
