Super Nachos         from the kitchen of: Aileen Drosendahl


Start by browning ground beef.  1 lb is enough to serve 4 so you probably want to freeze half of it.

Cook the beef along with a large onion chopped fairly small.
Meanwhile heat oven to 400 degrees.
Spread 1 can of refried beans in a pan..a pie pan will work pretty well.
Top with the meat.
The layer on top the following....if you don't like something, leave it out!
    1 small can of green chilies, chopped You might want to freeze half of these for next time
    1 1/2 cups of grated cheese....cheddar, Monterey Jack or what ever you like.
Drizzle over it all with a can of taco sauce.
Bake at 400  for 20 -22 minutes.
Top the whole thing ( or serve in small bowls alongside) the following
    sliced black olives
    diced tomatoes
    mashed avocado
    sour cream
Serve with tortilla chips....make sure to get fairly sturdy chips since you use them to scoop it out of the pan.
